The London premiere of a new Fabrico Próprio cake

By chance the three of us will be in London on the November 28-29 weekend. After we heard that Rita Pop and Zé Cardoso of The Portuguese Conspiracy were organising a Christmas pop-up shop at the The Pill Box Kitchen on Saturday, we thought it was just the right time to introduce Rita and Zé to Filipe Almeida Santos and launch another of six new Fabrico Próprio cake ideas that resulted from our 2-day workshop in 2008.

Filipe trained and worked as an architect but just over two years ago started studying pastry at the Oeste School of Tourism and Hotel Management in Caldas da Rainha/Óbidos. Here he was a student of chef Paulo Santos, with whom we’ve worked to develop a new set of cakes – as featured in Disegno magazine. Two of these cakes have already been launched in Portugal: the Espetada and the Libertina.

The Vulcão, Vulcano in English, is a cake that started from its name: what does a cake called Vulcão look and taste like? – asked Rita João at the time.

This is what Filipe has been working out in his spare time at the Flemings Mayfair Hotel in London, where he is currently the head pastry chef following stints with renowned chefs such as Joaquim Sousa at The Oitavos, José Avilez at Belcanto and Pierre Gagnaire at Sketch.
