Special Recipe
Even if cake recipes don’t interest us — because we just don’t bake them at home — there is however someone who is always into researching and experimenting. We have invited the young chef Hugo Nascimento (chef at the Terreiro do Paço restaurant in Lisbon) to pick one of the cakes most loved by the Portuguese and work on it. His “Snail with fruits and superior green tea sorbet”, the only recipe in the whole book, opens the horizons of confectionery to “the new gastronomy” and keeps the project-based approach that characterises the book, becoming one of the most surprising contributions to the project.
