Queque
S & I: Butter cake dough. Variations include: raisin, chocolate chips, almond, walnut, apple and others. H & C: Considered to be an homage to Catherine of Braganza, Queen of England, who, it is said, brought a recipe for Fruitcake upon returning to Portugal in the 17th century. The name Queque is in fact a transliteration of the English word cake, and its most common shape alludes to a queen’s crown. In Northern Portugal it is still possible to find these cakes in its once common paper wrapping.
