Manual Técnico de Pastelaria

On December 12 2012 we attended the launch of the Confectionery Technical Manual, a handbook published by the Tourism of Portugal’s Hospitality and Tourism Schools. Since then we’ve been suggesting this book to anyone who asks us if our book contains recipes (it actually only has one), as this manual has many, and good recipes that result in the joint work of eight chefs from Portugal’s national hospitality school network. It can be bought in any of the schools.
Also, we can’t help saying how proud we are that Fabrico Próprio is part of the manual’s bibliography.
